Clair stood in her marvelously modest kitchen. She had just finalized her decision to go back to college. An idea that permeated her existence with unraveling motivation which was quickly fading into question and uncertainty. Her decision met her schedule would be divided between working full time, going to school half time all while supporting herself on a budget that is best described as drained. However, she was determined to make it work. She did what almost anyone of us would have done in this situation. She made it work by preparing large amounts of the cheapest meals she could muster. These meals consisted of rice, spaghetti, stews, and casseroles. Suffice to say, her meal prepping strategy today is not what it used to be a few years ago.
